Basic Recipes
Masala Vada Batter
Ingredients:
1-1/2 cups bengal gram dal soaked in water for 3 hours
1 bunch dill leaves finely chopped
1 small bunch coriander leaves finely chopped
5-6 green chillies, crushed
salt as per taste,
2 tbsp finely chopped onions, (other veggies like carrots as desired).

Method:

  1. Drain dal
  2. Save 1/4 cup aside, grind rest to a batter with minimal or no water.
  3. Add all other ingredients including the kept whole dal
  4. The batter for vadas are ready

Method for Vadas:

  1. Add 2-3 tbsp. hot oil to the mixture.
  2. Heat oil, make patties shaped rounds with moist palm.
  3. Let carefully into the hot oil.
  4. Fry first one side then the other till golden brown.
  5. Serve hot with green chutney, tamarind chutney, or ketchup

Shelflife for the batter: 1 day refrigerated
