Ingredients3 big juicy carrots
1 tsp. lemon juice
1/2 cup crushed ice
2 tsp. sugar
1/4 tsp. salt
mint powder to taste
pepper powder to taste
tender sprigs of fresh mint to garnishMETHOD:
- Steam carrots in double boiler for 4-5 minutes.
- Cool and chill till required for juice.
- Chop carrots roughly, put into an electric mixer.
- Add salt, sugar, grind to a smooth paste.
- Add 400 ml. chilled water, run again till frothy.
- Strain through a fine mesh, discarding residue.
- Put crushed ice in 3 tall slender glasses.
- Pour juice into them, forming a froth.
- Sprinkle mint and pepper powder lightly.
- Place a small mint leaf couplet for garnish on top.
- Serve immediately.

Makes: 3 glasses
