Ingredients:2 large juicy starfruits
1 lemon
1 cup sugar
1 cup waterMETHOD:
- Slice starfruit into thick horizontal slices.
- Add half sugar to the water.
- Put to boil, adding fruit.
- Cook till fruit is tender.
- Drain fruit, saving the liquid.
- Add remaining sugar to liquid.
- Put back to boil to 1 thread consistency.
- Add lemon juice and fruit back to syrup.
- Boil further for 2-3 minutes.
- Take off fire, cool, bottle in sterile jar.
- Seal with nonmetallic airtight lid.
Making time: 30 minutes
Makes: 15-20 slices approx.
Shelflife: 4-6 weeks
