Chutneys
Starfruit Preserve in Sugar Syrup
Ingredients:

2 large juicy starfruits
1 lemon
1 cup sugar
1 cup water

METHOD:

  1. Slice starfruit into thick horizontal slices.
  2. Add half sugar to the water.
  3. Put to boil, adding fruit.
  4. Cook till fruit is tender.
  5. Drain fruit, saving the liquid.
  6. Add remaining sugar to liquid.
  7. Put back to boil to 1 thread consistency.
  8. Add lemon juice and fruit back to syrup.
  9. Boil further for 2-3 minutes.
  10. Take off fire, cool, bottle in sterile jar.
  11. Seal with nonmetallic airtight lid.

Making time: 30 minutes
Makes:           15-20 slices approx.
Shelflife:         4-6 weeks
