Ingredients:3 medium zucchini, peeled sparingly
1 onion thinly sliced into rings
1 tbsp. ginger chopped very finely
1 tbsp. finely scraped coconut
1 green chilli finely chopped
1 tbsp. soya sauce
1/4 tsp. sugar
1 pinch turmeric powder
salt to taste
1 tbsp. butter or oilMethod:
- Slice zucchini into thin rounds.
- Sprinkle a pinch or salt and a handful of water, keep aside.
- Heat oil, ginger, chillies, fry till ginger is slightly browned.
- Add onions, stirfry till tender and pink.
- Add zucchini slices, coconut, stirfry till tender, approx. 3-4 minutes.
- Add salt, soyasauce, turmeric, sugar, stir and cook for 2 minutes.
- Serve hot with steamed rice, slices of garlic bread or roti.
