Ginger Dishes
Gingered Zuchhini Fritters
Ingredients:

3 medium zucchini, peeled sparingly
1 onion thinly sliced into rings
1 tbsp. ginger chopped very finely
1 tbsp. finely scraped coconut
1 green chilli finely chopped
1 tbsp. soya sauce
1/4 tsp. sugar
1 pinch turmeric powder
salt to taste
1 tbsp. butter or oil

Method:

  1. Slice zucchini into thin rounds.
  2. Sprinkle a pinch or salt and a handful of water, keep aside.
  3. Heat oil, ginger, chillies, fry till ginger is slightly browned.
  4. Add onions, stirfry till tender and pink.
  5. Add zucchini slices, coconut, stirfry till tender, approx. 3-4 minutes.
  6. Add salt, soyasauce, turmeric, sugar, stir and cook for 2 minutes.
  7. Serve hot with steamed rice, slices of garlic bread or roti.

Making time: 15 minutes
Makes: 2 servings
