- Do not get disheartened at the long procedure of most gravy vegetables, if you are a busy person. Most of the leg-work of preparing these dishes can be done well in advance while you are doing your daily cooking chores. Only the last few steps of seasoning, boiling, frying, etc. need be done as part of your pre-dinner preparations. With just a little bit of prior planning you can give your dinner guests a pleasant surprise, with these rich vegetables!!
- A teeny little secret of mine to my readers! For any recipe that calls for ghee as the fat used, use 2/3 of the mentioned quantity replacing with low-cal oil. Then just before the recipe is about complete, heat 1/4 the quantity mentioned of ghee, and pour over the dish. Mix gently. This way the rich flavour of ghee is not lost, while the calorie count is considerably lowered.
- Do not add too much water to the gravies in an attempt to increase the quantity, since the richness of the flavour will be lost.
- A little judicious use of time and planning ahead can make gravy dishes one of your favourites on a dinner menu.
