Green Peas Dishes
Introduction
Botanical Name: Pisum sativum
Hindi : Matar
Marathi : Vatana
Kannada : Pattani
Gujarati : Vatana
Marwadi : Batana

The green pea needs no introduction to the most raw novices, into the vegetable world. It is grown widely in the moderate climatic regions. Also known as the sweet pea, or beach pea it is popular world over in cuisine of every nature.

Though it is best used in its fresh form, plucked from the vines, and removed from the pods, the frozen green peas are also equally good, if properly packed and stored.

This vegetable gives great taste in both ways, if used as a main ingredient in a dish, or as a secondary ingredient wherein it adds body and volume to the dish, without dominating in its flavour.

Right from eating them raw, straight from the pod, if they are tender, upto to boiling, grinding, frying, and baking, peas make a great ingredients in dishes of various kinds.

Commercially available frozen green peas, must be washed in tap water 2-3 times, before using as required, to make them taste more fresh.

When the recipe mentions a measure of peas, it means shelled peas, not the whole pods.
