Green Peas Dishes
Freezing Peas
To freeze peas at home:

Deseed peas from 2 kilograms of pods. Check for any rotten ones, or worms that might have stolen in. Take in a large plate, and clean thoroughly, sieve out finer unwanted particles.

Place 2 litres of water to boil, in a large vessel. When it starts to boil, immerse all peas in it. Cover and boil on high for 2-3 minutes, till peas turn a bright green. Drain in a colander, pour cold water over them, or hold under running tap water, till fully cooled.

Drain completely, spread out on a clean thick kitchen cloth, to absorb all excess moisture.

Leave for 30 minutes, pack into sterile ziplock bags, removing all the air, before sealing.

Place in the deep freezer, remove, thaw and use as and when required. If properly prepared, the peas will keep good for 7-8 months or more.
