Introduction:
This is time for celebrations, for festivities, and
rejoicing. No, not because it is a Diwali, Id,
Christmas, Baisakhi, Onam, etc. It is because it is the
festival of India. Of freedom, of pride, of self
respect restored for every Indian born: No matter what
region, caste or religion he belongs to.
Fifty five years ago this day, India achieved its
independence from the oppressive rule of the British
Raj.
Since then it has been a long struggle of finding its
feet, its identity, its individuality in a world of
powers and superpowers; while retaining its
sovereignty, and it has been no mean achievement.
Given the diversity of culture, religion, education,
lifestyles, vernacular and even topography, the people
of India still fly high with virtues like tolerance, co-
existence, live and let live way of life.
India in its true prismic colours, brings out one even
light of unity, though its various entities have all
properties as varied, as those of the seven colours of
the spectrum.
This mood and patriotic enthusiasm have also found
their way into not only the hearts of the Indian people
everywhere, but also into their kitchens, with fervour
and creativity.
So here's to India and the glory of its Tricolour:

garnish and decorate for the independence theme, adding
colour to it, are as follows: either sliced, grated or
chopped, are capsicums, mint leaves, coriander leaves,
spinach, paneer, cheese, white radish, carrot, orange
bell peppers, oranges, etc.
