Indonesian Dishes
Spicy Pineapple
Ingredients:

1 pineapple peeled, decored, diced into chunks
2 spring onions with greens
1 tsp. ginger grated
2 sprigs fresh mint leaves finely chopped
5 candlenuts, chopped
1 tsp. sambal ulek
2 tbsp. oil
1/4 tsp. salt
1 tsp. sugar powdered

Grind together in mortar and pestle:
1/2 tsp. cardamom seeds
1 tsp. cumin seeds
1/4 tsp. coriander seeds
2 cloves

Method:

  1. Chop spring onions with greens finely.
  2. Heat oil, add ginger, candlenuts, onions, strifry for a minute.
  3. Add ground spices, stir fry for 1 more minute.
  4. Add pineapple, water, cook for 2-3 minutes after it boils.
  5. Add mint, sambal ulek, salt, sugar, mix well.
  6. Cook till pineapple is soft but not mushy.
  7. Serve hot.

Making time: 15 minutes
Makes: 3 servings
