Monsoon Dishes
Omam Leaf Bhajias
Ingredients:

1 cup gram flour
10-12 fresh large omam leaves, finely chopped
1 tbsp. coriander leaves finely chopped
1 onion finely chopped
2 green chillies finely chopped
1/4 tsp. cumin seeds 1/4 tsp. turmeric powder
3-4 pinches asafetida
salt to taste
oil to deep fry

Method

  1. Sprinkle a little salt on chopped onion.
  2. Keep aside for five minutes.
  3. Sprinkle gram flour, coriander, omam leaves over onions.
  4. Add all other ingredients, except oil for frying.
  5. Mix gently with hand.
  6. Heat oil in a frying pan, allow to smoke lightly.
  7. Pour 1 tbsp. oil over batter.
  8. Mix again, drop small dumplings of dough into oil.
  9. Deep fry on med.-low heat till crisp and golden.
  10. Drain and place on absorbent kitchen paper, to remove excess oil.
  11. Serve hot with tamarind or green chutneys.

Making time: 15 minutes
Makes: 12-15 bhajjias
