Ingredients1 bunch fresh spinach
3-4 sprigs fresh mint leaves
1 tsp. lemon juice
1 tsp. sugar
Salt to taste
Pepper to tasteMETHOD:
- Wash spinach and mint leaves well.
- Put in an electric blender.
- Add all other ingredients.
- Add 300 ml. chilled water.
- Blend till very smooth and frothy.
- Pass through a strainer, chill very well.
- Serve chilled and frothy and fresh.

Makes: 2 servings
Shelflife: 2-3 hours refrigerated
