This recipe is vegetable (pumpkin, okra, beans) cooked is buttermilk. Known as Majjige Huli in karnataka and Mor Kozhambhu in Andhra Pradesh.Ingredients
100 gms lady fingers
2 cups sour buttermilk
2 tbsp oilGrind together:
4-5 green chillies
1/2" ginger
3/4 cup grated coconut
2 tbsp channa dal (soaked for 1 hour in water)
1/4 tsp turmeric powder
1 tsp mustard seeds
1 tbsp jeera
1 tbsp corriander powder
Salt as per tasteMethod:
- Cut lady finger into 1" pieces
- Heat oil in a kadai
- Stir fry lady fingers till tender
- Drain and keep aside
- Pour butter ilk in the kadai
- Bring it to boil, stirring continuously
- Add the grinded paste, and stir continuously
- Add 1/4 cup water, and let it cook for another 10-15 minutes
- Add fried okra, and let it simmer for another 5 minutes
- Garnish with corriander leaves
- Serve hot with roti
