Question: I need some information about chicken meat. I want to start a business of chicken meat from my own city to another. There is about 1000 km distance and train will take nearly 20 hours to take it from my city to the destination. If I daily slaughter the chicken meat in huge amount and pack in ice pieces in some utensils, is it sufficient to preserve the chicken meat? 1- what are the methods to preserves the chicken meat with out the losing its taste and weight? Are there some chemicals which really help me to hold the taste and colour of chicken meat for nearly about 24 hours and plus?

Ans: Freezing is the best method of preserving the meat with out any ill effects. Freezing techniques such as air blast freezing, contact freezing and cryogenic method of refrigeration or the refrigeration using liquid nitrogen at extremely low temperatures are the most advanced and best methods of preservation. Nitrites are a favourite preservative of meat processors even though its excess use is restricted in many countries. This chemical stabilises the red colour of the meat and gives an appearance of fresh meat. Nitrite salts can also react with certain amines in food to produce nitrosamines, which are known to cause cancer. Addition of Sodium ascorbate or sodium erythorbate inhibits nitrosamine formation and reduces the problem of nitrosamines. The use of nitrite and nitrate has decreased greatly because of refrigeration and restrictions on the amounts used. Butylated Hydroxyanisole (BHA), a phenol chemical compound antioxidant, used as a preservative in meats slows the development of off-flavours, odours, and colour changes caused by oxidation. Even though it is considered as safe some studies showed that it produce cancer in experimental animals. There for using chemical is not advisable and is also unethical. Best way is to use refrigerated vans for transport.

Question: I am 5 ft. 8 inches tall and weigh about 88 kg. Please do advise as to how many calories my regular diet contains and what should I reduce or replace in order to lose weight. I am very fond of sweets. I have started going to the gym from last month and work out for 45 min - 4 times a week.

Ans: First of all avoid sugar and sweet dishes from your diet. Have fruit for dessert. Include plenty of vegetables and fruits in your diet. Continue your work out which is good.

Ans: Hair loss is caused due to many causes such as pregnancy, anaemia, circulatory problems and thyroid disorders. Poor diet can also result in hair loss. Take diet rich in vitamin A, B vitamins and protein. Since you are a vegetarian and diabetic your diet should include carrots, dark green leafy vegetables, whole grain cereals, sprouted pulses, curd, milk as much as possible. Oil your hair and scalp daily. Don't use strong shampoo.

Ans: A woman's diet for three to six months before conception and during the first few weeks of pregnancy greatly influences the early development of the embryo. Take folic acid rich foods six weeks prior to becoming pregnant. Folic acid rich foods are liver, kidney, green leafy vegetables, nuts, and pulses. Ensuring a good intake of all vitamins and minerals is essential especially calcium, vitamin D, iron and zinc.

Question: I have a lot of hair-loss problem, please give me a home remedy and dietary supplement to reduce this problem.

Ans: Home remedy for falling hair is mix the juice of one lime with 4-table spoon of thick coconut milk and rub into the scalp and wash well. This should be repeated once a week for effective treatment. Massaging the hair scalp with fingers till it starts to tingle with the heat will activate the sebaceous glands and enables the blood circulation and makes the hair grow healthy. Instead of supplements take adequate amounts of eggs, nuts, soybean, mango, liver, dark green leafy vegetables, carrots, dried apricots, whole grain cereals, peas in the daily diet.

Ans: Being a vegetarian your diet should include plenty of soybeans and tofu in the diet. The main helpful foods are spinach, drumstick leaves, broccoli, carrots, ginger and celery. Banana should be a part of the breakfast food. All fruits are allowed. Evening prime rose oil has also been found to have anti-inflammatory effect and is there fore particularly useful for those who do not eat fish.

Ans: 100 gm of soy oil provides 884kcal of energy, 100gms of fat, of this 14.4 gm is saturated fat and the rest unsaturated. Protein, carbohydrates and cholesterol are not present. . Olive oil provides 884kcal of energy, 100gm of fat, 13.5 gm of saturated fat, per 100 gm.

Ans: The food items that help to stimulate the milk production are milk, garlic, fenugreek seeds, moong dhal and cumin. Your diet should include plenty of fresh fruit, vegetables, milk and milk products, fish, poultry, nuts, whole grains, parboiled rice and pulses to provide all extra vitamins, minerals, protein and energy required during this period. Have confidence in your self that you can lactate enough milk for your baby. Remember lactation is controlled by hormone produced by a gland situated near your brain.

Ans: Papaya when consumed regularly will ensure a good supply of vitamin A and C. if you eat papaya then there is no need for papaya supplement. Papain, a substance present in papaya is an excellent aid to digestion so it is good to prevent constipation. Papaya has more carotene compared to other fruits. Papaya is a low calorie fruit and a good source of beta-carotene, which helps to prevent damage by free radical, which might other wise lead to some forms of cancer.
